It’s Friday and that means we are cooking at Buckeye Honda in Lancaster Ohio.
The first Friday of every month brings Fit Food Friday to Buckeye Honda and do we have a good one today… LIGHT THE GRILL!!!
So today we are going to grill a salad… yes grill a salad…. no, not grill chicken for a salad (although that would be tasty) we are making a grilled Caesar Salad. We are making the dressing low-cal and low-fat so it is Fit Food Friday!
If you have never had grilled romaine lettuce you owe it to yourself to try. If you are scared bring it to the dealership and I will make it for you but don’t be scared, it is easy!
What you need.
4 Tbsp olive oil, extra virgin
Juice from 1 lemon
3 Tbsp reduced-calorie mayonnaise
3 tsp Worcestershire sauce
1 tsp minced garlic, finely minced
1/8 tsp black pepper, freshly ground (and more for garnish if desired)
3 head(s) romaine lettuce, halved lengthwise, stems attached, about 8 oz each – I also like to go with baby red romaine.
3 Tbsp grated Parmesan cheese, such as Parmiggiano Reggiano try to stay away from the stuff in the green can.
What you do:
- Preheat grill to medium-high.
- Meanwhile, in a small bowl, whisk together oil, lemon juice, mayonnaise, Worcestershire sauce, garlic and pepper until blended; set aside.
- Coat romaine hearts with cooking spray; grill until lightly charred, turning once, about 30 seconds to 1 minute per side.
- Place lettuce on a serving platter and drizzle with dressing; sprinkle with cheese and some freshly ground black pepper, if desired. Yields about 1/2 romaine heart, 1 tablespoon dressing and 2 teaspoons cheese per serving.
Now you could grill up some marinated chicken to go with this and it would be great.
