Foodie Friday: Grilled Pineapple w/Ice Cream

For most, the grill is a place to cook meat, I can not argue with this notion but to limit the caramelizing, smoke and flavor inducing flame to only meat is well… ridiculous.  Stretch your comfort zone and try something new like grilling fruit or vegetables.

What You Need:

Pineapple – You can get the ones with all of the “armour” still on it or get the ones that are already “peeled” and cored, they are typically the same price and both work just as well.  I actually prefer the pre-cored ones because of the juice in the container but either one works.

Brown Sugar

Cinnamon

Awesomeness – You can’t buy this in the store but you have it in you.

Vanilla Ice Cream

Pineapple juice from the pineapple container or some lemon or orange juice. (optional)

What to do:

Step 1: Mix about cup of brown sugar with 2 tablespoons of cinnamon and spread it onto a plate or put it into a ziplock bag (You might need to make more mixture depending on how many pineapple you cook)

Step 2: Cut your pineapple into rings or spears.  Either one it doesn’t make much different I did spears out of a non-cored pineapple and slices out of the cored.  Cut the pineapple on a plate to catch the juice.

Step 3: Coat the pineapple with the cinnamon and sugar mixture by putting a couple in the bag and shaking or by patting them on the plate and flipping over.

Step 4: Light Your grill and get it going about med-high to high

Step 5: Place pineapple on the grill and flip over after the underside has some good grill marks showing.

Step 6: Remove pineapple and top with ice cream

Step 7: Top with sauce and serve immediately.

How To Make The Sauce

In the bottom of your ziploc bag or on your plate you are going to start to have clumpy sugar cinnamon, add any juice that you were able to come by when you were carving your pineapple.

Now add a little bit of water, pineapple/orange/lemon juice or rum to the mixture and stir.

Use this as a sauce to top your ice cream if desired.

Alternate Adult Version

If you want to add a little different flavor and cook something a little less sweet you can soak your pineapple in spiced rum (and any pineapple juice you get from the container or from carving)for a couple of hours and then grill it.  Add some brown sugar to the rum after you have removed the pineapple and stir the mixture to make a sauce.

Grill the pineapple – top with ice cream – the top with rum sauce.
